There's nothing quite like a bowl of homemade chicken soup to warm your soul. This recipe takes a bit of time but is absolutely worth it - we'll make our own chicken stock from scratch and then turn it into a delicious, hearty soup.

Create Chicken Stock

Ingredients:

  • 1 whole chicken
  • 1 onion, chopped roughly
  • 2 carrots, peeled and chopped roughly
  • 5 cloves of garlic, chopped roughly
  • 10 peppercorns, placed in a teabag

Steps:

  1. Prepare the pot: Place all ingredients in a big pot, large enough to fit the whole chicken and everything else
  2. Add water: Fill with water to cover the chicken completely
  3. Bring to a boil: Heat on high until the water reaches a rolling boil
  4. Simmer: Reduce heat to low and simmer for 40 minutes
  5. Strain: Remove all ingredients from the pot, keeping the chicken for the next step. All other items can be discarded.

Pro tip: The chicken will be very tender at this point, so handle it carefully when removing from the pot!

Create Chicken Soup

Steps:

  1. Shred the chicken: Pull apart the reserved whole chicken into chicken strips of desired size and place back in the pot with the stock
  2. Add vegetables: Prepare whatever vegetables you prefer and add to pot. For example, you can use:
    • Onion, diced
    • Carrot, sliced
    • Celery, chopped
    • Any other vegetables you enjoy!
  3. Final cooking: Bring the pot to a boil and boil for the longest duration needed by any of the vegetables

Serve

The chicken soup is ready! 🍲

Eat what you like now and store the rest for future meals. This soup keeps well in the refrigerator for up to 3-4 days and can be frozen for up to 3 months.
